Culturellement toutefois, l\u2019empreinte britannique semble \u00e9tonnamment r\u00e9duite. James Bond est une des rares exceptions.<br \/>\nUne autre, plus surprenante, est la tradition de l\u2019<em>afternoon tea<\/em>, ou <em>high tea.<\/em>\t<\/div>\n<\/div>\n<div class=\"container\">\n\t<div class=\"text\" itemprop=\"articleBody\">\n\t\tEmbl\u00e9matique d\u2019un certain art de vivre \u00e0 la britannique, la mode de boire du th\u00e9 en Europe a pourtant d\u00e9but\u00e9 en France, au XVII\u00e8me si\u00e8cle, au sein de l\u2019aristocratie. Ainsi, Madame de S\u00e9vign\u00e9 y fait plusieurs fois r\u00e9f\u00e9rence dans sa correspondance, citant le cas de nobles buvant jusqu\u2019\u00e0 40 tasses par jour !\t<\/div>\n<\/div>\n\n<div class=\"large large\" style=\"background-color:#961157;\">\n\t<div class=\"container\">\n\t\t<div class=\"sub-article\">\n\t\t\t<h2>Contexte<\/h2>\n\t\t\t<p>C&rsquo;est le roi Charles II qui popularisa le th\u00e9 en Grande-Bretagne. R\u00e9fugi\u00e9 \u00e0 La Haye pendant la Deuxi\u00e8me Guerre civile anglaise, c&rsquo;est l\u00e0 qu&rsquo;il prit l&rsquo;habitude de boire r\u00e9guli\u00e8rement du th\u00e9.<br \/>\nQuand il revint d\u2019exil en 1660, il ramena avec lui cette habitude qui ne tarda pas \u00e0 se r\u00e9pandre notamment gr\u00e2ce \u00e0 son \u00e9pouse, Catherine de Bragance, amateur de cette boisson omnipr\u00e9sente dans sa jeunesse \u00e0 la cour de Lisbonne. La noblesse britannique suivit rapidement l\u2019exemple royal et la mode de boire du th\u00e9 se diffusa bient\u00f4t dans la classe dirigeante. Le go\u00fbt pour le th\u00e9 du monarque adopta \u00e9galement une forme politique. <\/p>\n<p>Ainsi, Charles II soutint fortement l\u2019action de la Compagnie britannique des Indes orientales, confirmant son monopole et lui octroyant m\u00eame l\u2019autorisation d&rsquo;user de la force sur les territoires avec lesquels elle souhaitait faire du commerce. La prise de possession de Hong Kong par le capitaine Charles Elliot en 1841 appara\u00eet comme le lointain aboutissement de cette politique \u00e9conomico-colonialiste<\/p>\n\t\t<\/div>\n\t<\/div>\n<\/div>\n<div class=\"container\">\n\t<div class=\"text\" itemprop=\"articleBody\">\n\t\tC\u2019est \u00e0 la fin du XIX\u00e8me si\u00e8cle, \u00e0 l&rsquo;\u00e9poque o\u00f9 la Grande-Bretagne s\u2019adjugea le contr\u00f4le de l\u2019\u00eele de Hong Kong que l\u2019id\u00e9e d\u2019agr\u00e9menter la prise de th\u00e9 d\u2019une l\u00e9g\u00e8re collation vit le jour.\t<\/div>\n<\/div>\n\n<div class=\"container\">\n\t<div class=\"text\" itemprop=\"articleBody\">\n\t\tOn raconte que ce serait une des dames de compagnie de la reine Victoria, la duchesse de Bedford qui, en 1840, aurait demand\u00e9 la premi\u00e8re \u00e0 ce que son th\u00e9 soit accompagn\u00e9 de sandwichs. Pratique qui se popularisa rapidement \u00e0 travers le royaume. \n<p>L\u2019<em>afternoon tea<\/em> ne tarda pas \u00e0 s\u2019imposer aussi aupr\u00e8s des citoyens de Sa Majest\u00e9 en poste dans les diff\u00e9rentes colonies de l\u2019Empire, qui, tr\u00e8s attach\u00e9s \u00e0 leur style de vie, y virent aussi une bonne occasion de se retrouver entre soi.<br \/>\nCe fut ensuite au tour des Chinois fortun\u00e9s d&rsquo;adopter l&rsquo;habitude au fur et \u00e0 mesure de leurs n\u00e9cessaires interactions avec l\u2019<em>establishment<\/em> britannique. Situ\u00e9 \u00e0 Tsim Sha Tsui (Kowloon), le Peninsula est l\u2019h\u00f4tel embl\u00e9matique du Port parfum\u00e9.<br \/>\nM\u00eame James Bond y posa ses valises quand il pourchassait l\u2019homme au pistolet d\u2019or dans le film du m\u00eame nom. <em>\u201cNous servons l\u2019afternoon tea dans le lobby et ce, depuis l\u2019ouverture de l\u2019h\u00f4tel en 1928,<\/em> explique Carrie Sung, responsable des relations m\u00e9dias de l\u2019\u00e9tablissement, <em>la seule diff\u00e9rence, c\u2019est qu\u2019autrefois nous avions de grands ventilateurs au plafond alors que maintenant nous avons des climatiseurs.\u201d<\/em>\n<p>Ce respect de la tradition se retrouve dans le menu propos\u00e9 : sandwichs au concombre et autres <em>scones<\/em> sont invariablement inscrits sur la carte.\t<\/p><\/div>\n<\/div>\n\n<div class=\"container\">\n\t<blockquote>\n\t\t<em>\u201cNotre chef est en charge des cuisines depuis plus de vingt ans maintenant. Nous avons fait quelques ajustements dans le menu au cours des ans mais tr\u00e8s peu en ce qui concerne le type des amuse-gueules. Nous avons toujours fait en sorte de coller \u00e0 la tradition britannique, nos changements portant plut\u00f4t sur la quantit\u00e9 des portions ou le prix du menu.\u201d<\/em>\t<\/blockquote>\n<\/div>\n<div class=\"container\">\n\t<div class=\"text\" itemprop=\"articleBody\">\n\t\tDu point de vue du Peninsula, c\u2019est ce c\u00f4t\u00e9 ultra traditionnel qui attire la client\u00e8le tr\u00e8s touristique qui arpente les rues bord\u00e9es de boutiques de luxe de Tsim Sha Tsui. <em> \u201cCertains de nos clients sont des locaux mais l\u2019essentiel de nos visiteurs sont des touristes venant d\u2019Europe, d\u2019Am\u00e9rique du Nord ou de Chine continentale. Il y a beaucoup de magasins prestigieux autour de l\u2019h\u00f4tel.<br \/>\nL\u2019<\/em><em>afternoon tea<\/em> est une occasion id\u00e9ale pour eux de faire une pause dans le cadre d\u2019une journ\u00e9e de shopping. A c\u00f4t\u00e9 de \u00e7a, nous avons \u00e9galement une r\u00e9putation d\u2019\u00e9tablissement historique, nous sommes souvent cit\u00e9s dans les guides touristiques pour l\u2019ambiance coloniale de l\u2019h\u00f4tel et, compar\u00e9s \u00e0 ceux de la concurrence, nos tarifs sont relativement abordables. Nous sommes conscients que tous ces facteurs contribuent \u00e0 notre popularit\u00e9 et nous leur accordons une tr\u00e8s grande importance dans nos choix et d\u00e9cisions.\u201d\n<p>Et cela marche! Car l\u2019<em>afternoon tea<\/em> est un business lucratif : <em>\u201cJe ne peux pas vous donner de chiffres mais, clairement, en ce qui concerne le lobby, l\u2019afternoon tea est le cr\u00e9neau qui g\u00e9n\u00e8re le plus d\u2019activit\u00e9 et de revenus.\u00a0\u00bb <\/em>\t<\/p><\/div>\n<\/div>\n\n<div class=\"container\">\n\t<h2>La French Touch en force<\/h2>\n<\/div>\n<div class=\"container\">\n\t<div class=\"text\" itemprop=\"articleBody\">\n\t\tLa plupart des \u00e9tablissements utilisent d\u2019autres arguments de vente pour se distinguer de la concurrence : partenariat avec des marques connues, changement r\u00e9gulier des menus, localisation spectaculaire&#8230;<br \/>\nMais l&rsquo;une des tendances les plus fortes semble \u00eatre l\u2019arriv\u00e9e des p\u00e2tisseries \u00e0 la fran\u00e7aise. Fini les sandwichs au concombre, bienvenue aux \u00e9clairs et autres choux \u00e0 la cr\u00e8me !\n<p>Cette nouvelle orientation est parfaitement illustr\u00e9e dans la politique d\u2019\u00e9tablissements comme le Four Seasons, adjacent  aux tours embl\u00e9matiques de l&rsquo;International Finance Center (IFC), et l\u2019InterContinental, en face, sur la promenade de Tsim Sha Tsui. Tous les deux ont embauch\u00e9 des chefs fran\u00e7ais pour leur menu de l\u2019apr\u00e8s-midi, respectivement Herv\u00e9 Fucho et Cyril Dupuis.<\/p>\n<p><em>\u201cLes autres h\u00f4tels du groupe Four Seasons ne proposent pas tous un afternoon tea mais, \u00e0 Hong Kong, de par l\u2019histoire de la ville et l\u2019environnement concurrentiel, c&rsquo;\u00e9tait une \u00e9vidence d&rsquo;en proposer sur notre menu !\u201d<\/em> explique Priscilla Chan, l\u2019attach\u00e9e de presse du Four Seasons. <em> \u201cIl y a une grande vari\u00e9t\u00e9 d\u2019offre en mati\u00e8re d\u2019afternoon tea, dont beaucoup avec des gimmicks \u00e0 vis\u00e9e tr\u00e8s commerciale\u201d,<\/em> rench\u00e9rit le chef Fucho, faisant allusion, par exemple, \u00e0 toutes les variations imaginables sur le th\u00e8me des personnages de Hello Kitty ou de Walt Disney.<br \/>\n<em>\u00ab\u00a0Notre credo \u00e0 nous, c\u2019est d&rsquo;\u00eatre constant dans la qualit\u00e9 de ce que nous proposons. J\u2019ai introduit de nombreuses p\u00e2tisseries \u00e0 la fran\u00e7aise, ce qui \u00e0 l&rsquo;\u00e9poque \u00e9tait encore relativement in\u00e9dit \u00e0 Hong Kong. Jusque-l\u00e0, la plupart des \u00e9tablissements ne proposaient que des menus tr\u00e8s britanniques !\u201d<\/em><br \/>\nUn tournant qui n\u2019a d\u2019ailleurs pas \u00e9t\u00e9 sans causer des difficult\u00e9s : <em>\u201cau d\u00e9but, tous ces changements n\u2019ont pas \u00e9t\u00e9 \u00e9vidents, il y avait une certaine routine qu\u2019il a fallu bousculer mais finalement, les \u00e9quipes ont su y trouver leur compte.\u201d<\/em>\n<p>Que ce soit au Four Seasons, ou \u00e0 l\u2019InterContinental, les cartes sont chang\u00e9es plusieurs fois par an &#8211; 4 \u00e0 5 fois pour le premier, et jusqu\u2019\u00e0 6 \u00e0 7 fois pour le second &#8211;  et ont tendance \u00e0 attirer une client\u00e8le plus locale que celle d&rsquo;\u00e9tablissements comme le Peninsula. <\/p>\n<p><em>\u201cL\u2019afternoon tea est l\u2019occasion de se retrouver en famille\u00a0\u00bb,<\/em> explique Dimitri Martin, vice manager de la restauration de l\u2019InterContinental. <em>\u00ab\u00a0C\u2019est une variation sur le th\u00e8me du yum cha<\/em> [mot \u00e0 mot \u00ab\u00a0boire le th\u00e9\u00a0\u00bb, sorte de brunch \u00e0 la hongkongaise avec des <em>dim sum<\/em> sal\u00e9s ou sucr\u00e9s NDLR] <em>qui est tr\u00e8s implant\u00e9e culturellement \u00e0 Hong Kong.\u201d<\/em><br \/>\n<em>\u201cM\u00eame des restaurants japonais ou italiens, \u00e9tablissements qu\u2019on n\u2019associe pas forc\u00e9ment \u00e0 l\u2019afternoon tea, proposent ce type de menus\u201d,<\/em> rench\u00e9rit Priscilla Chan.
